Goodbye and Hello!


I really feel bad about taking SO long to make this announcement but it is finally happening and I am having mixed emotions about this whole thing. After all I have been posting on this account for 6 years! (I am VERY sentimental) So first of all I would like to say how awed I am to have earned enough of your admiration to be worthy enough of having 53 of you as my personal followers! That is HUGE! How I could post things SO interesting that you guys all wanted to follow me amazes me! I just can't believe it! It's overwhelming as well as inspirational to write for a purpose! ! So in light of that I would like to give all of you a HUGE HUGE thank you!  You guys really inspire me to write more and more!  And so now I come to the topic of this post. I have been having some serious issues with this blogger account, my pictures will not show up and as you all know that takes away the main reason for posting on here! Sooooo I decided to close this blog for good and start over.....(It's not exactly what you think) By starting over I mean I am simply switching over to my new account but the new blog itself is actually under the name of my original blogger name "Horse Crazy Girl". My  original blog but with a fresh coat of paint so to speak. Hahah, I must say that I have missed writing under the name "Horse Crazy Girl". And I am VERY VERY excited about starting new! I have already posted a few posts on my new blog and have gotten several inspiring comments on it already! So with great excitement...I unveil:




P.S I also just got a new camera so all my pictures from now on will be hopefully much better quality! (And unless I specify otherwise all pictures are by me!)

Christmas Wonders and Fun

This week we were blessed with three big boxes: Oranges, Apples and Sweet Potatoes! A lovely surprise seeing as we go through fruit quite fast...lol  

I pulled a muscle in my shoulder. 
I have no idea how I managed to do that! 

Celebrated my 17th Birthday on Friday! My Birthday was really on Sunday but we didn't have time.

(I have some super awesome friends and Family)
How some of them remember to call my on my birthday every year amazes me! I LOVE IT! 

My mom Got my this ADORABLE maxi skirt for my Birthday and I'll definitely show you guys a pic soon! 

I have been reading holiday mystery novels none stop! (x

Watched "Frozen"! 
(Sweet sweet movie)

I've been exchanging letters with the sweetest little girl Ellie each Sunday at church. She is an amazing artist! And she is just darling! I gave her some paper dolls this Sunday and she would NOT put them down the rest of the morning! (:

 Been staying up until 11:00 and 12:00 PM listening to Christmas music on the radio and reading...or watching a Christmas movie! 

Praise the Lord for awesome aunts who get you cozy snowflake PJ pants for your birthday! 

Does anyone else out there have a crazy obsession with those holiday popcorn tins they sell each year? I always eat wayyyy to much of the caramel flavor....Haha! 


Ohhh, and we have received so many lovely Christmas Cards this year! So nice to see so many familiar faces again! 

We had a lovely Christmas service yesterday. Simply wonderful! 

Cuddling with my baby brother on the couch with his favorite blanket and teddy bear. 

Making supper in the cozy kitchen while the Christmas music flouts around the house bringing the urge to do a Christmas jig to anyone listening..lol

Ok enough with those little tidbits of information

Baby, its Cold Outside!

Hello! 

Hahaha I just had to use that title. Seems everyone on Blogger used it this week so I thought 
"Why not?" Ahhhh it is definitely THAT time of year again.

The time of year when you take artistic pictures of the winter weather (I didn't take this picture...But it was perfect.) 



The time of year you frequent quaint little coffee shops more then normal.
The time of year when you stop and stare at the beautiful scenery breathlessly.
 God painted some pretty awesome 3D pictures and then let us live in it.
The time of year you re-pin thousands and thousands of lovely wardrobe ideas!
I am SO guilty of this one! 
And the time of year when you drool over endless wonderful holiday recipes and promise yourself you will bake soon...just not today because you just don't have the time....lol Sound familiar?

Hot Chocolate Pudding Cake

Baking time for these pudding will vary based on what you bake it in. If you use a small/medium ramekin, it may take as little as 10 minutes. My cups took exactly 15 minutes. If using a larger bowl, they may need as much as 20 minutes in the oven. Whichever size, just bake them until a crust forms on top that has some deep cracks and a toothpick inserted into the centre comes out with some gooey batter attached.
You can refrigerate the batter before baking. Let sit at room temperature for a bit before baking and note it may take a few minutes longer to bake if the batter is cold. You can also bake ahead, let cool, cover and keep at room temperature for several hours or cover and refrigerate. Re-heat in a 350° oven for a few minutes or microwave to re-warm. Puddings will puff back up a bit when re-heated.

Ingredients

  • 4 oz./1 stick (115g) unsalted butter, cubed
  • 6 oz. (170g) semisweet or bittersweet chocolate, roughly chopped (somewhere around 70% is good)
  • 3 large eggs, at room temperature
  • 2/3 cup (134g) white sugar
  • Pinch of salt

Instructions

  1. Preheat the oven to 375° F. (190° C), with rack set in lower third of oven. Set ramekins or baking dishes on a baking sheet. No need to grease.
  2. Put the butter and chocolate in a medium-sized bowl, then set the bowl over a saucepan of barely simmering water. Stir gently until smooth. Remove the bowl from the heat and set aside.
  3. Using an electric mixer or by hand with a whisk, whip the eggs, sugar, and salt until the mixture is light and foamy, and just holding its shape (like soft whipped cream). This should take about 5 minutes with an electric mixer, or longer if doing by hand. Fold one-third of the beaten eggs into the chocolate to lighten it, then scrape the lightened chocolate mixture over the beaten eggs, and fold it in just until there are no streaks of eggs visible.
  4. Divide the batter into the baking dishes, filling them no more then 3/4 full (They will rise).
  5. Bake the puddings for about 12 to 20 minutes (depending on size of baking dish) until the puddings are puffed up and the top is crusted and deeply cracked. A toothpick inserted into the centre will come out with some soft chocolate attached.
  6. Serving and Storage: These can be served immediately, or you can let cool, cover, and keep at room temperature for up to a day. You can also refrigerate the batter before baking and then bring them to room temperature before baking.

Number of servings (yield): 4 – 6

Does anyone else out there ever go through Pinterest and say Mmmmm thats how I'm going to decorate my room this summer. Or, Mmmmm I'm going to start pinning a bunch of these goals and DO them this year? Or how about, Mmm that is so my style I'm going to try and adopt it into my wardrobe soon? 
Yah...its kinda a dilemma of mine. 

News Update 
I'm sitting here reliving the book I just finished reading. (When I read a book I am "there")
And the book I just finished was REALLY REALLY good! 
LOL
Papa is outside clearing the fence so that we can get our horses over here! 
That will be a dream come true for me! 

The puppies are getting really fat! LOL

I finished a Christmas present yesterday for Jessica and Allison and I REALLY want to show you guys my master piece but I'm scared to death they will see my post! 

I had Spanish rice and roasted sweet potatoes for lunch and I think it is one of my new favorite meals! 

And I'm listening to this at the moment
